➡ Recipe 1: Mediterranean Quinoa Salad
Ingredients:
1 cup cooked quinoa
1 cup cherry tomatoes (halved)
1 cucumber (diced)
1/2 cup Kalamata olives (sliced)
1/4 cup red onion (finely chopped)
1/2 cup feta cheese (crumbled)
2 tbsp olive oil
1 tbsp red wine vinegar
Salt and pepper to taste
Instructions:
1. In a large bowl, combine quinoa, tomatoes, cucumber, olives, onion, and feta.
2. Drizzle with olive oil and red wine vinegar.
3. Toss gently and season with salt and pepper.

Ingredients:
4 cups baby spinach
1 cup strawberries (sliced)
1/4 cup walnuts (toasted)
1/4 cup goat cheese (crumbled)
2 tbsp balsamic vinaigrette
Instructions:
1. Arrange spinach on a large plate or bowl.
2. Top with strawberries, walnuts, and goat cheese.
3. Drizzle with balsamic vinaigrette and serve immediately.

Ingredients:
1 can black beans (rinsed and drained)
1 cup corn kernels (fresh or frozen)
1 red bell pepper (diced)
1 avocado (diced)
1/4 cup red onion (chopped)
1/4 cup cilantro (chopped)
Juice of 1 lime
Salt and pepper to taste
Instructions:
1. Mix beans, corn, bell pepper, avocado, onion, and cilantro in a large bowl.
2. Squeeze lime juice over the salad.
3. Toss gently and season with salt and pepper.

Ingredients:
4 large tomatoes (sliced)
8 oz fresh mozzarella (sliced)
Fresh basil leaves
2 tbsp balsamic glaze

2. Tuck basil leaves between the slices.

1 tbsp maple syrup
Instructions:
1. Massage kale with a pinch of salt until tender.
2. Add roasted sweet potato, pumpkin seeds, and cranberries.
3. In a small bowl, whisk together vinegar, olive oil, and maple syrup.
